Easy Chickpea Burgers

Ingredients

THE HANGRY CHICKPEA

Chickpeas or white beans Red onion Spicy red pepper Mushrooms Garlic Parsley or cilantro Breadcrumbs Paprika, cumin, coriander Soy sauce or aminos Salt & pepper Grapeseed or olive oil Burger buns Greens Hummus Other toppings

Saute diced onion and pepper in a splash of oil for 3-5 minutes until soft. 

STEP 1

Add diced mushrooms and cook for 3-5 minutes until mushrooms release juices. Then add soy sauce and stir. 

STEP 2

Add spices, beans, and fresh herbs. Stir and cook for another 2-3 minutes so flavors can infuse. 

STEP 3

Place mixture into food processor and pulse until chunky. 

STEP 4

Remove mixture from food processor and mix in breadcrumbs by hand. Them form into patties and refrigerate for 10-15 minutes.

STEP 5

Bake 350F for 15-20 minutes on each side. Serve on bun with toppings of choice!
