Easy Mexican Rice

Ingredients

CUMIN

Place diced onion into a medium saucepan on medium heat. Cook for 3-5 minutes until onion is soft and translucent. Then add minced garlic and cook for another minute.until you can smell garlic.

STEP 1

Rinse rice in a bowl of water to remove debris and additional starch. 2-3 rounds works well. DO NOT SKIP THIS STEP!

STEP 2

Toast rice with garlic and onion for 1-2 minutes, stirring frequently to prevent burning. 

STEP 3

Add Rotel and bring to a boil. Then reduce heat, cover and cook for 15-20 minutes. 

STEP 4

Fluff with a fork, add salt if needed, and serve.
