butternut squash softened cashews shallot garlic grapeseed oil soy sauce hot water jalapeno pickled red onion black beans lime salt and pepper tortilla chips
First, peel and cube butternut squash. Aim for 3/4 inch cubes.
STEP 1
Toss cubes with grapeseed oil, salt and pepper. Bake at 350 F for 30-60 minutes, flipping halfway through.
STEP 2
Meanwhile, saute sliced shallots for 3-5 minutes until soft. Then add minced garlic and cook for another minute or two. Remove from heat.
STEP 3
When squash is done, fill blender all sauce ingredients. They must be HOT for the sauce to fully blend. Start on low, and increase speed as sauce combines.
STEP 4
Sauce is nice and smooth thanks to our hot ingredients. As always, use caution when blending hot liquids.
STEP 5
build nachos! Start with chips, then layer cheese, jalapenos, pickled red onions, and black beans. Enjoy!
