Ingredients

CUMIN

Dice onions and saute in a medium saucepan on medium heat. Then add garlic.

STEP 1

Add rice to saucepan and toast for 2-3 minutes, stirring regularly to prevent burning.

STEP 2

Add rotel (or diced tomatoes) and water or vegetable broth. Bring to a boil, then cover and reduce heat. Simmer for 15-20 minutes.

STEP 3

Fluff and serve! Perfect for tacos, burritos and burrito bowls, fajitas, or as a side to jazz up your meal.
