Soft Vegan Sugar Cookies

The Hangry Chickpea

Beat butter and vegetable oil with hand mixer until combined

Add sugars, as well as vanilla & almond extracts

Add aquafaba (aka chickpea juice) and coconut milk

Add dry ingredients in 3 parts

Scoop into balls and refrigerate for at least 15 mins before baking

Don't over-bake! Under baking is better.

Unchilled vs chilled dough...make sure to chill the dough!

Icing: powdered sugar, butter, coconut milk, and vanilla & almond extracts

Ready for food coloring!

Gently frost cookies and enjoy!
