Prep veggies and seitan. Sautee onions and shredded carrots, then add seitan crumbles and mushrooms, stirring frequently to prevent burning.
STEP 1
Add tomato sauce, stir gently, then cook on low heat for 5-10 minutes so flavors come together.
STEP 2
Now it's time to use this thick sauce to layer some lasagna...
STEP 3
Start with a thin layer of sauce, then layer noodles, sauce, zucchini slices, and cheeses. Repeat one more time.
STEP 4
On the last layer, use the rest of the sauce, cheese, and zucchini. Cover and bake at 350 F for 30-40 minutes, or until cheese is gooey.
