THE HANGRY CHICKPEA
Cut cauliflower into bite sized pieces, then toss with grapeseed oil, salt and pepper. Roast at 350 F for 40-50 minutes.
Meanwhile, prepare rice according to package instructions. For a spicer more interesting mexican red rice, swipe up!
Slice onions and peppers, saute with grapeseed oil and salt for 5-7 minutes until soft.
In the same pan, sautee frozen or fresh corn kernels with some grapeseed oil (and jalapeno if desired).
Mash avocado with salt and pepper for simplest guac. Add mango, tomatoes, finely diced onion and jalapeno for a little extra kick.
Assemble bowl with rice, cauliflower, sauteed veggies, corn, guac and black beans if desired. Enjoy!
