Vegan Carrot Cake Bread

The Hangry Chickpea

Grease pan with vegan butter

Add flour and tap to spread around pan

Mix oil, brown sugar, applesauce, carrots and aquafaba (aka chickpea juice) and vanilla extract

Add dry ingredients (flour, baking soda, baking powder, cinnamon, ginger and nutmeg) to wet ingredients and gently combine

Spread batter evenly into loaf pan and bake 350 F for 10-15 mins

Test with toothpick or knife - should come out clean. Cool completely, then remove from pan & refrigerate before frosting

Mix softened vegan butter & cream cheese with powdered sugar and cinnamon 

Frost that loaf!
