THE HANGRY CHICKPEA
Prepare pizza dough, or use store-bought dough. If making at home, give it plenty of time to rise. Meanwhile, prepare the toppings.
Meanwhile, place thinly slice onions into a saucepan on medium heat with a drizzle of oil. Once translucent, reduce heat, and cook for 1-2 hours, or until light to golden brown.
Sautee sliced mushrooms in a drizzle of grapeseed oil with a sprinkle of salt.
Once they've released juices, add soy sauce. Once the mushrooms have reabsorbed the flavor, set aside off the heat.
To make cheese sauce, start with vegan butter and flour in a small saucepan on low heat. . Whisk together until smooth. Then add milk in 4 parts, whisking to combine.
Once you've added all the milk, add vegan mozzarella, stirring until combined and melted.
Add cheese sauce, caramelized onions, and sauteed mushrooms to pizza dough. Bake at 450 for 10-15 minutes, or until crust is golden brown.
Add arugula and fig jam. Slice and enjoy!
