THE HANGRY CHICKPEA
pasta white beans garlic large onion tahini lemon olive oil or cooking oil salt & pepper slivered almonds (opt) thyme (opt) parsley (opt)
Saute diced onions in a splash of grapeseed oil and a pinch of salt. A large flat bottomed pan on medium heat works well. Meanwhile, cook pasta according to package instructions.
STEP 1
Add garlic, and cook for 1-2 more minutes until you can small the garlic. Stir frequently to prevent burning.
STEP 2
Blend bean/onion/garlic mixture with lemon juice and zest, tahini, salt and pepper to taste. Pour over pasta and gently mix, adding pasta water as needed to thin out.
STEP 3
Garnish with almond slivers, fresh black pepper, and parsley. Bonus points for a little white truffle oil if you have it on hand. Enjoy!
