Brighten up your lunch with a Roasted Carrot Hummus Sandwich, drizzled with a zesty cilantro lime dressing. This vibrant sandwich packs a flavorful punch, combining sweet roasted carrots and creamy hummus in every bite!
3CupsCarrotsBaby carrots worked well, but you can use larger carrots if you want
1teaspoonThyme
Salt and Pepper To taste
1-2tablespoonCooking OilGrapeseed or Olive Oil
Cilantro Lime Sauce
1 ½CupHellman's Vegan mayo
½CupCilantro leavesno stems
1-2Jalapenosroughly chopped (remove seeds for less spice)
2LimesJuiced
1.2OrangeJuiced
Sandwich Basics
Pita Pocketswhole wheat bakery bread, and store-bought sliced bread all work.
1CupHummusdealers choice, fresh/local preferred, or make your own!
1CupArugula
½Cucumber
¼ CupPickled Red Onions
Instructions
Preheat & prep: Preheat oven to 450 F. Wash, peel and remove stems from carrots. If using baby carrots, wash only. Cut into similar sizes if needed. Toss with olive oil, thyme, salt and pepper, and place on sheet pan. Roast for 25-35 mins or until easily pierce-able with a fork.
Make cilantro lime sauce:: Meanwhile, blend all cilantro lime sauce ingredients until smooth.
Build sandwich: Slather some hummus on one side of the bread, and cilantro lime sauce on the other. Put carrots on top of hummus side with pickled red onions, and cucumbers on cilantro lime side, Add arugula, put the sides together, and enjoy!
