Vegan Tzatziki Sauce

This Vegan Tzatziki sauce is a perfect addition to a Vegan Charcuterie Board with hummus, pita, apples, carrots, and tomatoes.

Ingredients
  

  • 10-12 oz plain vegan yogurt such as The Coconut Collaborative - you want something thick, not too watery
  • ¼ cup fresh dill or 2-3 Tbsp dried
  • 2 cloves garlic minced
  • 1 medium cucumber grated, and water squeezed out
  • 1 tsp salt
  • ½ lemon juiced
  • 1-2 Tbsp olive oil

Instructions
 

  • Squeeze out water from cucumber - I like to use a strainer and paper towels. There's more water in there than you would think! 
  • Combine all ingredients in medium mixing bowl, stir, and taste. Adjust seasoning as needed. 
  • Serve with pita, carrots, tomatoes, cucumbers, or on a sandwich.
