Southern Vegan Banana Pudding

5 cups vegan milk (I used oat)
3 small packages vanilla instant pudding (make sure it's vegan)
1 box Lorna Dune Cookies or Vanilla Sugar Wafers (check back of box to ensure no dairy - Bisco brand is good)
Medium carton Coconut Whip (look for it near the CoolWhip, SoDelicious is really good)
4 oz vegan yogurt (I use coconut by SoDelicious or Miyoko's Vanilla Coconut)
3 - 4 bananas - medium-ripe, not green, but not spotting yet. 


1. In a bowl, mix milk and pudding with whisk.
2. Mix in yogurt. 
3. Assemble in 4 layers: start with a thin layer of pudding, then some coconut whip (make sure to thaw for 5-10 mins) then cookies/wafers, then banana slices ending with pudding and cookie crumbles on top.
