This Vegan Tzatziki sauce is a perfect addition to a Vegan Charcuterie Board with hummus, pita, apples, carrots, and tomatoes.
10-12oz plain vegan yogurt (such as The Coconut Collaborative) - you want something thick, not too watery
1/4 cup fresh dill (or 2-3 Tbsp dried)
2 cloves garlic, minced
1 medium cucumber, grated, and water squeezed out
1 tsp salt
1/2 lemon juiced
1-2 Tbsp olive oil
Squeeze out water from cucumber - I like to use a strainer and paper towels. There's more water in there than you would think!
Combine all ingredients in medium mixing bowl, stir, and taste. Adjust seasoning as needed.
Serve with pita, carrots, tomatoes, cucumbers, or on a sandwich.
