Well, I’ve done it. I’ve created a macadamia nut butter recipe that will knock your socks off. If you’ve never tried macadamia nut butter before, you’re in for a real treat. It’s crumbly and crunchy, yet sweet.
I visited Hawaii earlier this year, and checked out a little soft-serve shop called Banan. They make vegan / dairy-free soft serve out of bananas from the islands, as well as their signature topping: mac nut butter. At my friends urging, I tried it, ended up buying 3 jars, one of which was gone by the time I landed in Florida. It’s THAT good.
Equipment & Ingredients
There aren’t many ingredients in this macadamia nut butter, but it’s paramount you have the right equipment. I suggest a food processor for high-speed blender (such as Vitamix).
As far as ingredients, I prefer raw macadamia nuts. I’ll roast them on a sheet pan for 5-10 mins to loosen some of those yummy nutty oils. I also used honey in this recipe to stay true to the original from Banan. Vegan purists can sub with agave or maple syrup. My honey had some orange blossom notes, so if you want some of that minus the honey, you can add a tsp or two of orange zest. I highly recommend it.

Macadamia nuts are expensive. Yup, they are. But so are almonds, cashews, etc. If you want to keep the wallet happy, just stick with peanuts, or make your own PB. But if you’re in the mood for an adventure, I really recommend giving this a try. You don’t need that many macadamia nuts to make a batch.
I don’t have a blender/food processor etc. Then get one. It will change your life. Some of my recommendations are here and here. If you’re serious about making good food, vegan or not, you need one. Chimichurri, milkshakes, falafel, creamy soups…SO many possibilities.
What do I eat macadamia nut butter with? Great question. So many things!
- On your smoothie
- On toast
- By the spoonful
- On top of ice cream
- As part of a peanut butter sandwich
- On a yummy dessert board
Basically, use it when you need something sweet and a little crunchy.
I’m vegan and don’t want to use honey. Sub with agave or maple syrup, and if you want the extra flavor, add some orange zest. Just make sure you add the liquid a little more slowly so you get the right consistency.

- Raw macadamia nuts (use roasted unsalted if you can’t find raw, and skip the roasting step)
- Salt
- Sweetener - I used orange blossom honey*, but you can totally use maple syrup or agave with some orange or citrus zest.
Instructions

Add all ingredients to high-speed blender or food processor, and blend on low. Scrape down the edges as needed. You’re looking for pieces the size of grits – not totally pulverized, but still small little nutty pieces.
If your nut butter isn’t coming together, add more sweetener. I suggest starting with less sweetener than you think, and then adding as needed.
Notes
*Note that honey is not technically vegan, as it is an animal product. Feel free to substitute if you'd prefer to avoid.
